One bite goodness

The food processor was my friend this afternoon. I love that thing, it comes in so handy… even though it takes up way too much room on my kitchen counter! (yes, my kitchen is that tiny…). I gave Kamal a few of these little things to try out and he said they were too good. Andrew’s review was positive as well, so much the he won’t let me publicly repeat it. HA.

They are really simple to make. Just throw the following ingredients into the food processor, pulse to a paste, roll into bite size balls, coat with shredded, unsweetened coconut and you are done (these quantities yielded 13 bite size balls):

  • 7 dates
  • 10-12 macadamia nuts
  • 1.5 tsp goji berries
  • 1 tsp maca powder
  • 1 tsp chia seeds
  • pinch of sea salt
  • 1 tbsp cocoa nibs
  • 1/2 tsp honey
  • 1/2 tsp vanilla extract
  • 2 tbsp shredded, unsweetened coconut

The basic nutrition info (for 2 balls, cause you are probably not going to eat just one…) is: Calories: 140kcal / Carbohydrates: 24g / Fiber: 3.2g / Fat: 5.6g / Protein: 1.14 (Note: if you wanted to add some more protein, I would add 0.5-1 scoop of protein powder).
