One bite goodness – 2nd version
This is the second version for a recipe I posed a while back for power bars (rolled into balls). I’m not a big fan of the term power bars, as they remind me of the first versions of said bars way back in the early 90′s. Those things were terrible, but they were also the only thing available on the market. The sports food industry has come a long way since then, for better and/or worse… but thats a topic for another post. The original version is posted here, if you want to try both versions for variety :)
What you need
- 8 dates
- 1 tbsp raw 100% cacao nibs
- 1 tsp maca powder (I get mine from Real Raw Food, located in Naramata, BC. They have some awesome stuff!)
- 1 tsp cinnamon
- 1 tsp chia seeds
- 1/2 cup dehydrated pineapple (NOT the sugary kind, please…)
- 1 tbsp pecan butter
- pinch of sea salt
- 1/2 tsp honey
- 1/2 tsp almond extract
- ~1/4 cup shredded, unsweetened coconut – for coating
How to
Chop the pineapple to small pieces and throw in the food processor with everything else and pulse till everything is blended properly. Thats it, as simple as that… Be careful not to pulse for too long though. Roll into small, bite size balls and coat with the shredded coconut.
